The 3-Phase System

The Brabender FarinoGraph is one of the world’s most important and well-known instruments for determining the water absorption of flour and the rheological properties of dough. The accuracy, reliability and reproducibility of the test results are important for the technical dialogue in successful business relationships between manufacturers and suppliers of flour products in increasingly global markets.

As part of Brabender’s proven 3-Phase System, the FarinoGraph, together with the Extensograph and Amylograph, provides a holistic and practical demonstration of the production of bakery and pasta products on a laboratory scale.

Brabender honors Ewald Heckmann who passed away on June 17, 2023. Ewald was born May 4, 1934, in Duisburg, Germany. He was a master craftsman of his trade and began working for Brabender at age 14. At 24, Ewald immigrated to the US and continued his career with C.W Brabender Instruments, Inc. in South Hackensack, NJ until the age of 72, when he retired as the Executive Vice President. Ewald was a man of character, loyalty, and ethics who donated his body to science. Ewald is deeply missed by his Brabender family.
